Just like fruits, vegetables contain the majority of their concentrated vitamins in the skin. For example, in a carrot, the skin contains a very high concentration of vitamin C, niacin, and vitamin A. In Asparagus, the skin contains concentrated Vitamin A, Vitamin B1, Vitamin B2, Vitamin B6, Vitamin C, and Folate. The vegetable itself also has these vitamins without the skin but it would contain a lesser amount.
