Request a tour of the restaurant and conduct a brief interview with the restaurant manager. If you are unable to tour the restaurant or get an interview, then visit a quick-service restaurant and conduct an observation of it. You can also contact a hotel that has a restaurant on site. Hotels are usually more open to providing tours and participating in interviews.
