First, the cocoa bean was sacred in the Aztec Empire. The beans were used to make a chocolate drink, different than the hot chocolate we have now. The Mexicas added peppers, corn meal and spices instead of sugar. The word chocolate comes from an Aztec word chocolatl. Second is maize or corn that was grounded into flour and used to make tortillas, tamales and even added in some drinks. Today we use corn starch in making candies and as a cattle food. Third would be beans. Ancient Mexicans learned through time that the combination of beans and maize could replace meat. The Aztec had very rich cousine, eating everything from algae to honey, but these tree were the staples we still use today.
