The Ark of Taste is an online catalog of foods that are at risk of extinction. Slow Food, an international organization that promotes eating healthy local foods, oversees the Ark of Taste project. Ordinary people from all over the world can nominate foods for the Ark of Taste. Food nominations must meet a certain set of criteria before being accepted into the catalog. The chicken has a distinctive flavor and is eaten during celebrations in the Molo region of Kenya. Slow Food started a program to protect the Mushunu chicken. The program provided tools and training to conserve the chicken. Slow Food has launched projects to save over 400 of the Ark of Taste food items. The Ark of Taste currently lists over 1,000 items.
