In the prologue, they explain specifically the impact of sugar on several instances, from their family`s to the country level. We are introduced specifically to what their families have gone through, how wealth came to and left the hands of people, how hard work and slavery marked the sugar plantations, but also led to revolution and birth of human rights and freedom. We get a hint of how sugar unites people from India, Guayana, Ukraine, the British Empire, and many more on a chase for a better life, or at least survival.

An example from the prologue: It is a story of the movement of millions of people, of fortunes made and lost, of brutality and delight - all because of tiny crystals stirred into our coffee, twirled on top of a cake.
