Shell- and-Tube Heat Exchanger to Heat Chicken Broth
A double-pipe HX operated in counter-current mode is used to heat chicken soup broth. The heat exchanger consists of a 2 in. schedule 80 stainless steel inside the pipe and a 4 in. schedule 40 stainless steel outside the pipe. The broth at 20oC enters the inside pipe at a volumetric flow rate of 10.0 L/min. and must exit at 80oC. The heating fluid is water which enters the shell side at 95oC and exits at 65oC. The overall heat transfer coefficient (U) and heat exchanger size (Area and Length) must be calculated.
Note: Assume the properties of the chicken broth are the same as water.
a. Sketch and completely label the process, including inlet and outlet streams. State all assumptions.
b. Sketch the expected temperature profile in the HX.
c. Calculate the overall heat transfer coefficient (U). Calculate and list separately all resistances. Which resistance is the dominant resistance to heat transfer?
d. Calculate the log-mean-temperature difference for the HX.
e. Calculate the required Area of the HX and Length of the double-pipe heat exchanger.
