vegetable pasta soup (makes 10 servings)
1 c. chopped onion
14 t. pepper
1 15 oz.-can great
2 t. olive oil
1 t. basil
northern beans,
1 c. diced carrot
1 c. diced zucchini
drained and rinsed
1 c. minced celery
2 14.5-oz. cans tomatoes 3/4 c. uncooked pasta
1 t. oregano
3 c. chicken broth
1/4 c. snipped fresh parsley
1. in a soup kettle, sauté the onion in olive oil until it is soft, about 5 minutes.
2. add carrot, celery, oregano, pepper, and basil. cover and cook over low heat for 5 minutes.
3. stir in zucchini, tomatoes, chicken broth, and beans. cover and simmer gently for 30 minutes.
4. heat soup to a boil.
5. add pasta and boil until tender, about 10 minutes.
6. stir in parsley and serve.
