Your goal is to produce fruit preserve using 45 kg of fresh fruit. 210 g of a pectin solution that contains 3 parts pectin (3 wt%), 14 parts sugar (14 wt%) and 83 parts water (83wt%), 300 g of a citric acid solution that contains 50wt% citric acid and the rest water and a solid sugar stream are added along with the fresh fruit to the mixer. The fresh fruit contains 12% soluble solids and the rest water. After mixing, the solution enters an evaporator where some of the water is removed. The final product should contain 68% total solids and 20% sugar. Here total solids include sugar, pectin, citric acid and the soluble solids from the fruit. Required:
Calculate the amount of water thatneeds to be removed from in the evaporator and the amount of sugar that needs to be added.
