Condensation produces a heat transfer as follows: the latent heat (amount of energy required by a substance to change phase) contained in the vapor is released at the moment when the vapor condenses into the liquid phase. The amount of latent heat delivered is 2-5 times greater than the amount of sensible heat (amount of heat absorbed or released by a body) contained in hot water (saturated water) after condensation. This latent heat is released instantly and transferred by means of the heat exchanger to the product being heated.
