Sugars are soluble carbohydrates which are used in food. They are found in the tissues of most plants, but only sugar cane and beets tissues contain sugar in high enough concentrations to be extracted efficiently. Sucrose has a different structure to glucose and fructose. Glucose and fructose as simple sugars. They are also known as monosaccharides. Sucrose is a disaccharide. It is made up of  the monosaccharides glucose and fructose. The human body breaks down sucrose into glucose and fructose molecules.
