In this activity, you will test the action of the lactase enzyme in different conditions and on different solutions.

If you’ve purchased an Edmentum lab kit, get out the materials for the enzyme activity, in the bags labeled "Enzymes" and "Common Materials." The equipment in the kit is in the list below. If you’re not using an Edmentum lab kit, alternatives have been suggested in parentheses.

You will need these materials:

3 beakers, 400 ml (or 3 plastic pint glasses)
3 test tubes (or seven 3-ounce disposable paper cups)
100-ml graduated cylinder (or a 1-cup measuring cup)
10-ml graduated cylinder (no alternative needed)
a stirrer (or a spoon)
glucose test strips (can be purchased at any drugstore)
2 lactase pills (can be found in the dietary section of any drugstore)
safety goggles
You will also need these items:

1 lunch-sized microwaveable container (about 5” W x 4.25” H x 3” L)
oven mitts
3 tablespoons sugar
¼ cup milk (any variety)
250 ml water (1 cup)
masking tape
a pen
Part A: Hypothesis and Data Collection
You will prepare the following solutions for this activity:

milk and water
milk and lactase enzyme
milk and lactase enzyme heated to boiling
sucrose and water
sucrose and lactase enzyme
sucrose and lactase enzyme heated to boiling
You will test these solutions for the presence of glucose by using glucose test strips.
