Ionizable side groups located in the active site must have a certain charge for the enzyme to bind its substrate. Neutralization of even one of these charges alters an enzyme’s catalytic activity. Excessive acidity or alkalinity renders them inactive.

there is not 1 highest source of protein, but there are many; meats, fish, poultry, seafood, cheese, eggs, yogurt and milk. the only non complete animal food that is beneficial is gelatin.
