place it in a lightly oiled bowl to prove. live 1 hour until doubles in size or in fridge for 1 day.

knock back the dough and then gently mold into a ball. place it on a baking tray lined with parchment for about an hour.

dust the loaf with flour and cut a cross about 6cm wide into top of loaf.

preheat oven 200 degree Celsius and bake for 20-25 min

bake until golden brown and loaf sound hollow when underneath

cool on a wire rack.
